Bacon-Wrapped Filet with Black Bean Tomato Salad

  • 1 Farm Promise® Pork Loin Filet
  • 6 slices Farm Promise® Slow Smoked Uncured Hardwood Bacon
  • 1 (16 oz) can black beans, rinsed and drained
  • 1 medium tomato, peeled and finely chopped
  • ¼ cup green onions, finely sliced
  • 1 tsp fresh oregano, chopped
  • ½ tsp ground cumin
  • Dash of red pepper flakes
  • Salt and freshly ground black pepper, to taste


  1. Preheat oven to 400ºF and heat grill to medium high heat.
  2. Cut loin filet into 1½-inch slices, then generously season with salt and pepper on both sides.
  3. Wrap a slice of bacon around the outside of each filet slice and use a toothpick to keep it in place.
  4. Place your bacon-wrapped filets on the grill, cooking until each side has clear grill marks.
  5. Move filets onto a baking sheet and finish cooking in the oven until they are cooked through, about 10 minutes.
  6. Meanwhile, combine beans, tomatoes, oregano, and cumin in a medium saucepan. Cook over medium heat, stirring occasionally, until thoroughly warm. Add red pepper, salt, and black pepper to taste.
  7. Serve filets hot, topped with warm salad.
