Pork Scallopini with Lemon Caper Sauce

  • 1 Farm Promise® Pork Loin Filet, sliced and pounded into ¼-inch thick rounds
  • ¼ cup flour
  • 2 Tbsp olive oil
  • ½ cup white wine
  • 6 Tbsp butter
  • 1 Tbsp capers
  • Juice of 2 lemons
  • 2 Tbsp flat leaf parsley, chopped
  • Salt and freshly ground black pepper
  • 1 lb. box of pasta


  1. Season pork rounds with salt and pepper, then coat with flour.
  2. Heat olive oil in a large skillet over medium high heat, then add pork and brown, 2–3 minutes per side. Remove pork from pan.
  3. Reduce heat to medium, then melt ½ tsp butter in the skillet and cook until butter foams and turns golden brown. Meanwhile, crush capers with the back of a spoon, then add capers to butter and sauté until capers are fragrant, just 15–20 seconds. Add lemon juice and bring to a simmer. Add wine and continue to cook, stirring frequently, until liquid is reduced by a third, about 1–3 minutes. Season with salt and pepper.
  4. Remove your sauce from heat, then add remaining cold butter and mix for about 1 minute, until butter is thoroughly melted and sauce is thick and shiny.
  5. Return pork to pan and toss to coat. Sprinkle with parsley, then serve over fresh-cooked pasta.
