Sausage and Gruyere Stuffed Portobello Caps

  • 1 lb Farm Promise® Hot Italian Ground Sausage
  • 6 portabello mushroom caps
  • ⅓ cup gruyere cheese, shredded
  • 2 Tbsp scallions, chopped
  • ¼ cup panko bread crumbs
  • ¼ cup red wine


  1. Preheat oven to 350ºF.
  2. In a large skillet over medium high heat, cook sausage until browned and cooked through, about ten minutes. Drain and allow to cool.
  3. Clean mushroom caps, removing gills and stem.
  4. Combine cooled sausage, cheese, and scallions.
  5. Stuff mixture into mushroom caps, then sprinkle with a generous layer of bread crumbs.
  6. Place mushrooms in a greased baking dish, then pour red wine around them.
  7. Bake for 20 minutes, or until mushroom caps are tender and warmed throughout.
