Cut a 1-inch slit in each pork chop, then expand to create a pocket inside the chop.
Mix remaining ingredients together. Then stuff your flavorful filling into the chop pockets until they’re almost overflowing.
Use toothpicks to hold the pockets closed.
Place stuffed chops in a large skillet and cook over medium high heat until the bottom side is golden brown, about 10 minutes.
Flip the chops and cook for another 10 minutes or so.
Lower the heat, and add ½ cup of hot water to the skillet. Cover the skillet and simmer for 25–30 minutes, or until chops are cooked through and internal temperature reaches 145ºF. To keep chops moist, don’t let water level get too low. Add more hot water throughout cooking as needed.
