Pork Burger with Apple Celery Slaw

Ingredients:
2 lbs Farm Promise® Ground Pork
1 gala or honey crisp apple
1 tbsp fresh thyme
2 tsp grated lemon zest
1 tbsp fresh lemon juice
1½ tbsp olive oil
1 tbsp whole grain mustard
2 stalks celery
½ bunch scallion
¼ cup roughly chopped fresh flat leaf parsley
Salt and pepper
2 oz. blue cheese (optional)
6 brioche buns
Mixed greens
Preparation:
Place pork in a large bowl.
Grate half of the apple, add to the bowl along with thyme, lemon zest, ½ teaspoon salt and pepper; mix to combine.
Form the mix into 6 patties.
Heat 1 tablespoon oil in a large sauté pan over medium high heat.
Cook the burgers, covered, until cooked through 5 to 7 minutes per side. Transfer to a plate and cover with foil to keep warm.
In another bowl, whisk together lemon juice mustard and remaining ½ tablespoon oil.
Cut the remaining apple into ½ inch pieces. Add them to the lemon mixture along with celery, scallion, and parsley and toss to combine.
Fold in the blue cheese.
Place the burgers on the buns, tip with the slaw and serve with a salad or sweet potato fries.
