Pork Burger with Apple Celery Slaw

Ingredients:
- 2 lbs Farm Promise® Ground Pork
- 1 gala or honey crisp apple
- 1 tbsp fresh thyme
- 2 tsp grated lemon zest
- 1 tbsp fresh lemon juice
- 1½ tbsp olive oil
- 1 tbsp whole grain mustard
- 2 stalks celery
- ½ bunch scallion
- ¼ cup roughly chopped fresh flat leaf parsley
- Salt and pepper
- 2 oz. blue cheese (optional)
- 6 brioche buns
- Mixed greens
Preparation:
- Place pork in a large bowl.
- Grate half of the apple, add to the bowl along with thyme, lemon zest, ½ teaspoon salt and pepper; mix to combine.
- Form the mix into 6 patties.
- Heat 1 tablespoon oil in a large sauté pan over medium high heat.
- Cook the burgers, covered, until cooked through 5 to 7 minutes per side. Transfer to a plate and cover with foil to keep warm.
- In another bowl, whisk together lemon juice mustard and remaining ½ tablespoon oil.
- Cut the remaining apple into ½ inch pieces. Add them to the lemon mixture along with celery, scallion, and parsley and toss to combine.
- Fold in the blue cheese.
- Place the burgers on the buns, tip with the slaw and serve with a salad or sweet potato fries.
