Savory Pork Chops with Sweet Potato & Cornbread Stuffing

Ingredients:
2 Farm Promise Pork Chops
1 4 x 8 inch loaf of pre-made cornbread
1 cup sweet potatoes diced into 1/4 inch pieces
1 /4 cup diced onion
1 /4 cup diced carrot
1/2 cup cranberries
4 tbsp butter
1 cup chicken broth
1 tsp parsley
2 tsp fresh rosemary, chopped
2 tsp sage
1 tsp thyme
1 egg
Preparation:
Preheat Oven to 350°
Prepare pork chops by inserting a knife into the edge of the chop and cut to form a large pocket in chop.
Cut cornbread into small 1/2″ pieces and place on a baking sheet sit on top of stove to allow the bread to dry slightly.
In a small sauce pan, melt butter over medium heat and add carrots, sweet potatoes and onion. Cook until onions are translucent. Add spices and combine, add chicken broth and simmer for 5 minutes.
Transfer mix to large bowl and add cornbread and mix gently.
Add egg and mix until combined.
Stir in cranberries and allow to sit for 5 minutes.
Stuff mixture evenly into pockets of pork chops.
Place remaining stuffing in the bottom of an 8″ x 8″ baking dish.
Place chops on top and cover with foil.
Place in oven and bake for 25-30 minutes.
Remove and keep covered and allow to rest for 5-10 minutes before serving.
